Manx Steam and Model Engineering Club have a photo of a rack loco in use on their line

At least one Orenstein & Koppel rack loco has passed through the hands of Station Road Steam: 7¼" gauge Orenstein & Koppel rack & pinion locomotive
 

Swiss Vapeur Parc have a rack section on their line but have very little information on their site (which is only in French and German)
